All concession stands are staffed by volunteer organizations (I'm part of one). You get 10% of food and non-alcoholic beverage sales and 7% of alcohol sales. This is after the sales tax is taken out from the total sales. Also, your total gets reduced by any losses your stand incurs (e.g. you drop a hot dog, it comes out of your pay).

Groups working the concessions get an "in kind" payment for the labor.
10 workers, 4 hours. They get paid for 40 hours at a fixed rate.
Fargodome/Bison get the concession revenues. Since the group is "volunteering" i would assume Fargodome doesn't pay FICA taxes, workers comp on the the volunteers.
