Hutchins BBQ is fantastic, the brisket especially, and there's one just a couple miles east of the stadium. Don't get there too late though (either for lunch or dinner) since once they're out of brisket your taste buds are out of luck.

I would also recommend you try Legacy Food Hall (https://legacyfoodhall.com/food-stalls-bars/) while you're in town. Friday night probably isn't the best for EWU fans as the Bison festivities are going to be held there. If you have a family or group that has trouble deciding on where to eat, this place is perfect. I've eaten there several times with different groups of people and nobody has ever tried anything they didn't like. The Asian buns from Enter the Bao are always at the top of people's list.
Best bet for BBQ for the Dallas trip is to stop in Kansas City on the way down, the way back, or both times.

I will second this. Rudy’s is awesome.
Not sure if Salt Lick has any sites in the DFW metro but if you like mustard based bbq sauce then that’s your place. Worth the trip to Austin if no DFW sites. Then you can also hit Ironworks and Blacks and Stubs. And the Lustre Pearl and... hell, I’m gonna stay in TX all January.
