For both him and Hunter Zenzen Dom is saying they have 3 years left but it's really only 2 unless they take a redshirt since neither have to count 2020 as their redshirt year.
Sheppard even said when he announced that he was entering the portal that he had 2 years of eligibility left: https://twitter.com/21shepp_/status/1597630576810684418

Watched Izzo's signing day show this morning. A fair amount of transfer portal talk and the thing that stuck out to me was how many times it was repeated when talking about players transferring out of NDSU that academics "could be" a part of it. That and the transfer portal is an easier way for players to essentially quit football. Instead of having to say I quit they can announce going into the portal and when they don't get picked up anywhere they can walk away from the game.
The talk about players becoming academically ineligible and then entering the transfer portal so they don't have to sit out a year was very interesting and very much to me sounded like a hint at some of the most recent transfers.

7 years. He also didn't appear in any games in the 2016, 2018, and 2019 seasons. So one of those was his regular redshirt and he must've gotten a medical redshirt for one of the others. Since the 2020 (2021 spring) season didn't count that's how he got to 7.
Apparently you can get multiple medical hardship years though (maybe only if it's the same injury that keeps you out multiple seasons???) as evidenced by this Oregon TE who could come back for a 9th year of college football next year if he would want: https://bleacherreport.com/articles/...ided-on-future
