Exploria Stadium is really nice...the grass is great. We get a lot of rain, so an inch the day before a game really isn't an issue. Right next to the downtown bar district. Convenient to light rail. Plus that is good fishing season for anyone wanting to snag a few bass or crappie in the St. Johns or blues and grouper from the Atlantic.
San Pedro, Belize? There is a pitch there since we're into the soccer fields.

Really anywhere which is nice in January. And they must also embrace the championship, if they don't embrace it and make it a fun, inclusive event, then there's no point.
Would also have to be somewhere easy to drive or fly to. Orlando, Phoenix, and Vegas come to mind fast.
