The word Eszett comes from the two letters that make up the sound of the ß character: S(Es-) and Z(-zett). The Ace-mas pronunciation is about the closest you can get using standard English letters.
So why use the b? Well, the countries that use German as a language, but do not use the special characters, use a double s (ss) to replace the ß. Put that into the name and you can get an idea why an ancestor of Max chose to do something different and just live with the constant mispronunciations.
