Every time i read the title of this thread i sing it to the tune of Santa Claus is Coming to Town-

"Santa Claus is coming, to town...."

"Nicholls State is coming, to town..."

I was thinking maybe Mr Meaty was tying Colonel Sanders to the Nicholls mascot the Colonels?

Yes, but they're not just the Colonels, they're the Cajun Colonels. Greenfield was saying that KFC reflects only half of their name. And while KFC has come out with flavors connected to Georgia, South Carolina and Tennessee, I don't think they've ever come out with a Louisiana or Cajun flavor.
