Along KC's thoughts, I automatically discount any post that misses (or disses) the heyday of the sixties and the seventies. Or earlier.
Among the pre 80s coaches that deserve accolades: Gilmour Dobie, Darrell Mudra, Ron Erhart, and Jim Wacker. The athletes? Many more than have been noted in this thread.
In fact, the faces on a mountain may be best represented by the five Bison who have been elected to the College Football Hall of Fame:
