Has the idea of a live bison being run across the field at the start of the game simular to Colorado or Texas' Longhorn? (I think Texas does this)

I was giving an example another type of mascot on field before games. I believe the Texas Longhorns, have a Longhorn on the field before games. Not to be confused with a bison.

It's not so rare for schools to have four-legged animals on the field before the game. Hell, even SDSU does it. Or are those the cheerleaders? Either way I guess the point is made.So why do they have a Bison on the field? That would seem to really confuse people.
