Mine is Cheesy Chicken Tortilla Soup.

Ingredients
•1 envelope Taco Seasoning
•1-½ pound Boneless, Skinless Chicken Breasts, Diced
•½ cups Chopped Onion
•2 T Butter
•⅓ cups Flour
•2-½ cups broth, chicken or vegetable
•8-12 oz. 2% Milk Velveeta, cubed
•8 oz. Shredded Monterey Jack or Mexican 4 cheese blend shredded cheese
•1 jar salsa (http://cookingwithkrista.blogspot.com/2009/08/home-canned-salsa-how-to-guide.html) (any Variety)
•1 cup half and half or milk
•Fritos, green onion, and sour cream (for garnish)

Preparation Instructions

In a skillet, add seasoning and diced chicken. Cook until chicken is thoroughly cooked. Drain, and set aside. (or cook chicken and toss with seasoning mix like I did)

In large saucepan (or pot), saute onion in butter for 2 minutes. Stir in flour until blended, then gradually stir in the broth. Bring to a boil. Cook and stir for two minutes longer, or until thickened slightly. Add Velveeta, shredded cheese and salsa. Cook on medium-low until cheese is melted.

Stir in half and half. Add the chicken back in. Stir. Heat through but do not boil. Remove from heat. Garnish with Fritos (you can also use guacamole, sour cream, and green onions).

4. Set up
5. Slice
6. Eat

A bacon wrapped sausage roll. Like the one Fanatic linked (http://www.bbqaddicts.com/blog/recipes/bacon-explosion/) to last year. I plan to spread a country dijon mustard in the middle of the sausage rather than crumbling up more bacon, roll it up, then put the bacon weave around the roll. Slow cook for a couple of hours and offer it up. Oh, I am making the sausage from scratch.

Smoked a couple of those this summer for parties and they were a hit.

Taco Soup

1 LB hamburger
2 cans kidney beans
2 cans corn
2 cans pinto beans
1 Large can of diced tomatos
1 can of rotel
1 packet of ranch seasoning
1 packet of taco seasoning
drain the beans, leave the juice in everything else, brown the hamburger, put in crockpot for 8 hours

I don't think we have a go to menu item. My wife doesn't like making the same thing twice...and she really doesn't like making something that others are making.

This post is right on the brink of being perfect target practice for assholes like me. BUT, the 2 sentences are intentionally crafted in such a way that we vultures are left with nothing more than a tiny wet spot on their zippers like a frustrated lap dance patron. Well done, Sensai.

We make a taco dip. Its really easy to make. Make your normal taco meat. We just ground beef and use Ortega taco seasoning) and melt in a block of mexican velveeta. Looks horrible but tastes really good.

I do a sorta chili dip. Sometimes we call it taco dip, I don't know why.

1 pound hamburger
1 small can tomato sauce
1 package cream cheese
1 package McCormick's chili seasoning mix
1/2 a green pepper, diced
2 jalapenos, diced, as desired

serve warm-to-hot

Buffalo Chicken Dip.

1 package cream cheese
1 cup cheddar cheese
1/2 cup ranch dressing
2 cans chicken (drained)
1/3 cup buffalo wing sauce (I prefer Louisiana Wing Sauce and increase to 1/2 cup)

Put everything in a crock pot, heat it up for a couple hours, stirring occasionally, serve with tortilla chips or crackers
