View Full Version : Who is ready for Saturday??

Went out to do a little shopping to prepare for Saturday. I feel like it's the first game of the season all over again.


First, we had to find something to make to eat while enjoying the weather and company.

Got about 8-9lbs of Pork shoulder, lightly rubbed with coarse ground pepper and kosher salt. I'll toss them on the smoker tomorrow after work and pull them off some time before we head out, I'm guessing around 6am.

Next, we needed a dessert. After tireless searching, I think I found the perfect compliment. 5 or so pounds of rummybears with a 1.75 of Ron Diaz Lemon currently being absorbed.

We also decided on a whole bunch of wings(not pictured, yet). I will throw them on the smoker with the pork, and they should be done in about 60-90mins. Toss them on the grill before serving, and we'll have some smoked chicken wings.

We gotta gooooooooooo!

Thanks buddy! That's why I do it, I want to hear comments! I just hope I can duplicate it again this week.

Anyone that hasn't been over to our area and had some food/bears/shots, don't be shy. You can't miss our tailgate, it's loud and in the rainforest.

In hindsight, I should've grabbed some of that stuff last week. You can bet I won't make the same mistake twice, everything was delicious.

After work today, it was time to get back to work. Pulled the pork out of the fridge after being rubbed overnight. I decided I was going to try injecting it this run, so I purchased "Simply Apple" 100% apple juice.

Then it was time to check on the chicken wings and get those going. I have them brining for awhile longer in a mixture of water, kosher salt, coarse black pepper, and paprika.

Lastly, I had to see how the rummybears were coming along. Looks like they are right on schedule as the booze is quite a way below the top of the bears.

By the time I was done with all the prep work, the smoker was ready to go. Going to be a long night!

Here is a quick action shot of the magic happening. It's chilly and windy so this is going to be an uphill battle all night! Currently hovering right around 215-225. I'm hoping the wood takes off a little more and adds some more heat. It should help once the meat gets a little warmer too, but the wings will bring it down a little bit.

I will be curious to see what you think of the injecting as when I have done it, it didn't really add much. Tried a few different types even bought a "cajun injector" with different injectables to try and it didn't seem to add the flavor or moisture I thought it would. I even kind of wonder if it just added portals for the porks own juices to escape.

I've only injected beef, and I was less than impressed...but that was early in my learning curve, so who knows what else I screwed up.

That's what I'm a little worried about myself. But some people seem to swear by it, so we will see. I may end up finishing it in the oven later, and I might try to inject it again then before I wrap it up.

If your temp is too high it will.

I'm having a heck of a time with temp control tonight, the wind is brutal and is swirling around from a couple of directions. I can't seem to set it up in a good enough place to shield it from the wind. It was cold for awhile and then went up to 275-300 for awhile, and was back down to 225ish last I checked. It shouldn't be overly smoky anyway.

This. certain cuts of meat are also more susceptible to this... But if done right a flavor injector can work magic.

Depending on how long you need to get the smokey flavor right I would then pull it and finish it in the oven where you can control the temp. I would also use a drip pan with apple juice in the over as well.

This is also a great way to do prime rib.

Yep, that was kind of the plan. Last week I pulled it at around 145-150 and it turned out decent, so I'm going with somewhere between 145 and 165 I think..depending on how long it takes. I usually wrap it tight in foil when I stick it in the oven so it "steams" itself since it's such a dry heat.

Ive got a tri tip technique that is killer if you want it.

Really? I thought they were pretty terrible, not going to lie lol The creosote built up on them quite a bit, but if they were edible, I'll take the compliment! Glad you could make it to the game, too!

Man EZ that brisket was money man, let me know when there isn't games going on and you're cooking I might just have to stop on over. There's so much good food in that West lot I wish I could try more of it.

Haha, glad you liked it. I was surprised to see that was completely crushed at the end of the game. That was a 15lber, so I'm impressed lol. I had 12lbs of pork but we only had half of it out. I finally think I'm getting it down to a science now so I should have a more consistent product.
